Nutty Blondies
Wondering what to do with the leftover Nut Pulp when you make homemade nut milk?! Whip up some Nutty Blondies, your body will thank you!
What you need:
1 cup almond pulp (sub with your favorite nut pulp)
½ cup Agave
¼ cup ground flaxseed
1 cup old fashioned rolled oats
2 teaspoons ground cinnamon
½ teaspoon fine sea salt
½ cup semi-sweet mini chocolate chips
½ cup dark chocolate chips (optional for the sauce)
½ cup almond butter (I used Base Culture Gingerbread)
2 teaspoons vanilla extract
1 tablespoon Ghee (optional for the sauce)
What you do:
** If you are using homemade almond pulp, make sure you squeeze out as much of the moisture as possible. If you store in a fridge beforehand, this can help dehydrate the pulp some**
1. Preheat the oven to 350 degrees. Grease a 9x5 loaf pan with grease of choice (butter, oil, or parchment paper).
2. Mix flaxseeds with Agave and set aside for about 10 minutes, it should gel up. This is important as it helps bind everything together.
3. In a large bowl, mix the almond pulp, oats, cinnamon, and salt. Mix in the mini chocolate chips.
4. Once 10 minutes is up, add the almond butter and vanilla to the Agave/flaxseed mixture. Mix until smooth. Then pour over the dry ingredients and mix until everything is combined and sticky feeling.
5. Spread the dough in the loaf pan evenly.
6. Bake for 30 minutes or until the top gets golden brown and firm.
7. Let them cool for about 1 hour before cutting or they will fall apart.
8. In a saucepan, melt a tablespoon of Ghee and the dark chocolate chips. Once melted, use a rubber spatula to spread the chocolate over the top. Cut into bars and enjoy!
** I highly recommend serving them warm so if you are storing them in the fridge for treats all week, pop them in the microwave for about 15 seconds before enjoying!
What’s Nut Pulp?
When making nut milks often times you need to strain the pulp out of the milk so that the milk isn’t so thick. The pulp that gets strained is called Nut Pulp! I normally make these Nutty Blondies whenever I make almond milk or some other nut milk that needs to be strained.
