Shell Be's Summer Lobster Tails
Have you ever cooked lobster!? It’s surprisingly super easy and if you’re a Costco member, you can find great quality lobster tails. My boyfriend John does all the Costco runs and it’s always such a treat when he comes home with lobster tails for me to cook. 10/10 recommend giving this a shot if you’re a lobster fan!
Serving Size: 5
What you need:
5 lobster tails
½ tsp Worcestershire
1 stick unsalted butter
1 lime
2 large garlic cloves
1 tsp paprika
½ tsp black pepper
½ tsp salt
1 green onion
Optional Sides:
Oven-Baked Corn on the Cob (one of my favorites!)
5 corns on the cob
Butter and Worcestershire Sautéed Mushrooms (one of John’s favorites!)
1 or 2 cartons of white button mushrooms (quantity depends on # of servings that are needed… I always prefer to have extra over not enough, extras can also be repurposed throughout the week)
What you do:
Preheat the oven to 375 degrees.
Prep the lobster tails by using kitchen scissors to cut down the middle of the top of the tail. Gently pull the shell open and pull the lobster meat up (it can be helpful to use a spoon to loosen the lobster meat from the shell) be careful not to fully disconnect the meat from the end of the tail. Once the lobster meat is free from the shell, lift it up and close the shell so you can place the meat on top. I like to give the meat a quick rinse after it’s been lifted from the shell. Place the tails on a cooking pan.
In a small mixing bowl (preferably microwave safe), place the unsalted butter and heat the butter until it’s melted (typically 10-15 seconds). Add in the Worcestershire sauce, lime, minced garlic, paprika, salt, and pepper. Mix until well combined.
Using a kitchen brush, slather the lobster tails with the butter mix making sure they are well covered.
Stick the tails in the oven for 14 mins (time may vary depending on the size of the tails but it should take somewhere between 12-15 minutes).
While the tails cook, thinly chop up the green onion which will be used as a garnish for the tails.
Once the timer is up, remove the tails from the oven, sprinkle them with the chopped green onions. Plate up and serve!
Oven-Baked Corn on the Cob
Clean the Corn of the Cobs (if the husk is still on them, peel the husk off and rinse).
Place each cob on a sheet of aluminum tin foil.
Drizzle each cob with avocado oil
Sprinkle each cob with salt and paper
Wrap each cob up in its sheet of tin foil
Place on a cooking pan
Stick in the oven at 375 for about 20 minutes (test if the cobs are ready by sticking the cob with a fork, the fork should slide in an easy kind of like if you stuck a fork in a grape).
Once cook, serve and enjoy!
Butter and Worcestershire Sautéed Mushrooms
Rinse and chop a carton of white button mushrooms. I typically quarter mushrooms unless they are smaller than I just cut them in half.
In a pan (I used my OurPlace pan), on medium heat, melt about 2 tbsp of unsalted butter. Once melted add in 2 tbsp of Worcestershire sauce. Stir until combined.
Add the chopped mushrooms. Cover the pan and let the mushrooms simmer for about 2 minutes. Remove the lid and stir. Sauté until mushrooms are soft (in total it takes about 5-8 minutes depending on size). Most of the butter/Worcestershire sauce should be soaked up and mushrooms may stay to look slightly crisped.
Serve as a side and enjoy!
