Shell’s Homemade Chocolate Peanut Butter Cups
Ingredients:
1 cup creamy peanut butter (natural or your favorite brand)
1 cup semi-sweet
1 cup dark chocolate chips
2 tablespoons coconut oil
Equipment:
Silicone Peanut Butter Cup Mold
Mixing bowls
Spoon or small spatula
Instructions:
Melt the Chocolate:
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is fully melted and smooth. Alternatively, you can melt the chocolate using a double boiler on the stove.
Assemble the Peanut Butter Cups:
Spoon about 1 teaspoon of melted chocolate into each Peanut Butter Cup Mold, tilting the tin slightly to coat the bottom and a bit up the sides.
Place the Peanut Butter Cup Mold in the refrigerator or freezer for about 10 minutes to let the chocolate set.
Once set, spoon about 1 teaspoon of the peanut butter onto the center of each chocolate layer, spreading it slightly but not all the way to the edges.
Top the peanut butter layer with another teaspoon of melted chocolate, spreading it to cover the peanut butter completely.
Chill and Set:
Place the Peanut Butter Cup Mold back in the refrigerator or freezer for about 20-30 minutes, or until the chocolate is fully set.
Serve and Enjoy:
Once set, remove the peanut butter cups from the Peanut Butter Cup Mold. Enjoy your homemade peanut butter cups!
Storage:
Store the peanut butter cups in an airtight container in the refrigerator for up to two weeks. For longer storage, you can freeze them for up to three months.
